There are many beautiful legends about the origin of the lake. According to one of them, many years ago on the site of the lake there was a flat area inhabited by Circassians. The richest resident had a beautiful, kind and hardworking daughter, even the birds heard her singing. One day, while working in the field, she heard the enchanting melody of a flute. Moving towards the sound, she came to the musician, who turned out to be a poor shepherd. Young people fell in love with each other at first sight, but the girl's parents were against an unequal marriage - they did not want such a groom for their beloved daughter.
Her father locked her up, thinking that she would come to her senses in time. Once, during a noisy holiday, she still managed to escape. The rich people were so dispersed at the celebration that they began to pour wine and throw bread into it in front of the eyes of poor residents, thus demonstrating their wealth. By this they aroused the wrath of the god, who made the village collapse, and a lake appeared in its place.
When she returned, the girl saw a lake instead of an aul and realized that her parents and friends were no more. She burst into tears, which turned into a stream called Tears of the Circassian. In desperation, she even wanted to drown herself in the lake, but it picked her up and carried her over the surface of the water to the other side. There she met her lover, who was able to save her from despair. They say that until now at night on the lake in a certain place you can see a strange flicker, supposedly these are the traces of a girl who walked along the waves.

Here, they say, the village, along with the layer of earth, sank, and the groundwater came out.
Another legend says that on the site of the lake there was an aul with rich and arrogant inhabitants. They wanted to pave the road to the sea with gold and silver (there was absolutely nowhere to see). However, this seemed too much to the higher forces and the whole village fell down, and underground water came out.
There is only one conclusion: the inhabitants believe the underground origin of the lake and some kind of shift of the earth layer.
The peculiarity of the lake is that it is drainless, not a single river flows out, and there is only one tributary - the Durso, not counting the numerous small springs and streams that carry their water from the peaks.
Lake today
Abrau is certainly a natural monument of the region, its picturesque and peaceful corner. At its deepest point, it is 11m, but local elders are sure that a few decades ago the depth was 30m. This indicates a rapid siltation of water and gradually the reservoir becomes shallower, although the authorities are trying to take action.

Many beautiful girls lived in this god-favored village, but the most beautiful was the daughter of a noble gentleman, the richest resident of the village.
She was not only sweet and friendly, any work argued in her hands, and even the nightingales heard her singing. Once, while working in the field, singing a simple song, the girl heard the pleasant sounds of a flute coming from somewhere in the mountains. Enchanted, she followed the music, coming up with the most beautiful song as she went. And now the two melodies merged into one, at the same moment two hearts united: the maiden saw a shepherd with heavenly eyes playing a musical instrument. But the beauty's parents did not approve of her daughter's choice: the poor shepherd is not a suitable match for the most enviable bride of the village. Her father locked her in a dungeon for many days, so that she could no longer see her lover. Day and night, the formidable head of the clan repeated: “Let the rivers flood the aul rather than my daughter marry a shepherd!” All the inhabitants of the village echoed this formidable spell, disapproving of the unequal union.
On one of the bleak days for the lovers, a holiday happened in the village: to the noise of the girlish crowd, they managed to escape unnoticed. And the celebration was gaining momentum: rich people beat clay plates and poured wine on the ground to demonstrate their well-being. Excited, they began to throw bread into the sea in front of the poor and starving children.
Such an unreasonable act offended the gods: they decided to punish the village for the vanity and extravagance of the inhabitants. When the girl wanted to return to her native village, he was no longer there: there was a huge lake. Realizing what happened here, the beauty began to mourn her parents and friends: her tears turned into a stream, known as the “Tears of a Circassian”. In desperation, she wanted to throw herself into a pond and die along with her mother and father. But instead of sinking to the bottom, the girl glided across the surface of the water and crossed to the opposite shore, where she fell into the arms of her shepherd boy.
Love healed the wounds in the beauty's heart. And at the place of her steps on the water, even today on a clear night you can see a mystical flicker that science cannot explain.

And the walk will be pleasant: mountain air with an admixture of the smell of resin, dogwood, landscapes, which would be an honor for any major artist to paint. It’s worth starting to replenish the traveler’s album right from the car: you don’t need to have special skills to catch the beauty in the photo, the lake in the village of Abrau-Dyurso is perfection itself.

In fact, Abrau and Durso are two different settlements: Abrau is located on the shore of the lake, and Durso is near the sea, seven kilometers from Abrau along a narrow road along a mountain serpentine. Durso is a small village that does not have a market, but there are several shops.
The name of the lake "Abrau" in translation from the Circassian means "cliff", a few kilometers from the lake, the river Durso flows behind the pass, it is fed by four springs, and in translation from the Circassian "Durso" means four waters.
What is remarkable about this small village, besides the fact that there is a beautiful lake there? The main hallmark of Abrau is the champagne factory built here in 1894-1900.

Today, the Abrau-Dyurso Champagne Winery is the largest producer in Russia producing sparkling wine using the classic champagne technology. The production of sparkling and table wines in 2005 amounted to 5.8 million bottles (410,000 deciliters).

Well, it's a joke, of course. But in every joke, as you know... I think the production process for cheap champagne carbonated wine is not much different from this photo.
I do not set myself the goal of telling you in detail the entire technical process for making champagne wines - I have already forgotten a lot of things. So I'll tell you what I remember. Let Wikipedia help me :)
The grapes used in the manufacture of champagne are usually harvested ahead of time - when the level of sugar in it is lower and the level of acidity is higher. The juice from the harvested grapes is squeezed out quickly enough to keep the wine white (this does not apply to the production of pink champagne).
Initial fermentation begins just like any other wine, in stainless steel barrels or tanks (pictured above), where the natural sugar in the grapes is converted to alcohol, while the by-product carbon dioxide escapes. In this way a "base wine" is obtained. This wine is too sour and not very pleasant on its own. At this stage, blending is carried out using wines from different vineyards and different years (this does not apply to the production of individual types of champagne, specially made from grapes of the same year).
Mixed wine is bottled, a mixture of the same blend is added there, with yeast and a small amount of sugar. Bottles in a horizontal position are placed in the wine cellar for secondary fermentation.
During secondary fermentation, carbon dioxide remains in the bottle, dissolving into the wine. The amount of added sugar affects the pressure in the bottle. To achieve the standard level of 6 bar, 18 grams of sugar and Saccharomyces cerevisiae yeast must be inside the bottle in the amount established by the European Commission: 0.3 grams per bottle. Such a mixture of sugar, yeast and still champagne is called in French "liqueur de tirage" ("circulation liqueur" in the domestic classification).
After aging (minimum 12 months on the lees), bottles of wine are subjected to a “remuage” process, during which they are rotated daily at a small angle and gradually moved to the “neck down” position so that the sediment collects at the neck and can be would remove.
The process of removing the sediment is called "disgorgement", and in the recent past it was a highly skilled manual operation to remove the cork and remove the sediment without losing a significant amount of wine.
Here is a tool for this operation:
With a deft movement of the hand, the cork is knocked out and a fountain of liquid beats into the upper bucket, removing unnecessary sediment from the bottle. You need to be a great professional to cork the bottle back in time.
At the same time, a “dose” is carried out (a certain amount of a solution of sugar in wine, called “expedition liquor”, is added). Then the bottle is corked again and aged for a short time, about 2 weeks. Prior to the invention of this process (reputedly pioneered by Madame Clicquot in 1800), champagne was cloudy. Currently, most manufacturers perform disgorgement using automatic machines: a small amount of liquid at the neck of the bottle is frozen, and a piece of ice, along with the sediment frozen into it, is removed.
Champagne wines must be aged in the producer's cellar for at least 15 months, of which at least 12 months the wine must be aged on the lees. Authorized champagne regulations require vintage cuvees to age in the cellar for three or more years before disgorging, but many well-known producers significantly exceed this minimum requirement by leaving bottles in the cellar for 6 to 8 years before disgorging.
Even among experts, there is no unequivocal opinion on the effect of aging champagne after disgorgement. Some like the freshness and energy of a young, barely disgorged champagne; others prefer the baked apple and caramel flavors that come with a year or more of Champagne aging after disgorging.
The vast majority of champagne is made from a mixture of wines from different years. Usually the main volume is the wine of the current year, but a certain volume is also the “wine from the reserve” of previous years. This blending of wines helps smooth out some of the flavor fluctuations caused by Champagne's marginal grape-growing climate. Most champagne producers strive for a consistent "corporate identity" from year to year, and ensuring this consistency is one of the most difficult tasks of the winemaker.
The grapes for the production of vintage champagne must be 100% from the harvest of one year. To maintain the quality of the base champagnes, only up to 85% of the grapes in each year are allowed to be used to produce vintage cuvees, and at least 15% (usually more) is left for the production of the base wine. Millesime champagne is usually made from the best vintages in certain particularly good years, so a bottle of prestige-brand millesime cuvée can be rare and very expensive.

We were offered to taste 6 different varieties of champagne, which is produced at this plant - from the most budgetary to the most expensive, which is served on the Kremlin New Year's table.
By the way, even the most "budget" wine is quite expensive already at the factory - about 200 rubles. at 2007 prices. The most expensive variety of champagne "Brut" (number 1) is considered. This year I wanted to buy a bottle for the New Year for 600+ rubles, but "the toad strangled" - I took semi-sweet for 300 :)
A few words about tasting. In no case should champagne be eaten with sweets - it quickly interrupts the taste of wine and the next sip may seem "sour".
To reduce the risk of spilling champagne and/or popping the cork, open a champagne bottle as follows:
* Pre-cool the bottle with a drink to about 10-15 degrees
* Remove foil
* Grasp the cork with your hand
* Loosen but do not remove the muzzle holding the stopper
* Firmly grasp the cork in the wire in your hand, and then turn the bottle (not the cork), holding it at the base; this should help the cork come out of the bottle
The desired effect is to uncork the bottle with a little pop, rather than shoot the cork across the room and make a foamy wine fountain. Many wine connoisseurs insist that the ideal way to open a bottle of champagne is to do it gently and calmly, so that the bottle makes a subtle sound like an exhalation or a whisper.
The deliberate splashing of champagne has become an integral part of the presentation of sports trophies.
Champagne is usually served in special flute-shaped champagne glasses with a long stem and a tall, narrow bowl. The wider, flat glass commonly associated with champagne, which better appreciates the sweeter varieties, is now discouraged by connoisseurs because it does not retain the wine's bubbles and aroma.
Champagne is best tasted from large red wine glasses (for example, from a Bordeaux glass), since the aroma spreads better in a large glass, but unlike a bowl, it does not evaporate and remains inside the glass.
The glass should not be filled entirely: champagne flute glasses fill two-thirds of the volume, and large red wine glasses - no more than a third.
Champagne is always served chilled, best at 7°C. Often the bottle is chilled in a bucket of water and ice before and after opening. For this, special buckets for champagne are made.
Champagne, like all other sparkling wines, gives a faster, but shorter intoxication. This is due to the fact that the carbon dioxide contained in sparkling wine increases the effective absorption surface of ethanol upon transition to the gaseous state, which leads to an acceleration of its entry into the blood, and part of the ethanol is absorbed already at the level of the oral cavity and enters the brain, bypassing the liver. Sugar, contained in all types of sparkling wines, except for brut and dry, also contributes to the acceleration of absorption.

Abrau is the largest freshwater lake in the Krasnodar Territory. Its length is more than 2600 m, the maximum width is 600 m, the area is 0.6 sq. km.

Next time we will move to the city of Anapa, where we set up our "base camp" in one of the boarding houses for 2 weeks, and from where we made further trips around the edge - Utrish, dolphinarium, dolmens, mountain rivers and waterfalls. As well as the indescribable beauty of the Anapa storms.
